Farringdon’s dining scene keeps raising the stakes. PAM, a new Thai restaurant from former Kiln head chef Karla Knowles, opens on 3 November 2026 at 61 Charterhouse Street, fusing bold Thai flavours with seasonal British produce over live fire.
Knowles made her name at Kiln, where her Thai-inspired claypots and open-fire cooking won serious critical acclaim. PAM is her first permanent restaurant, opened in partnership with Edouard and Romain Bourrillon of Maisons Vivantes, the hospitality group behind Cocotte and Casa Felicia.
What is on the menu
The 45-cover dining room keeps things intimate, and fire sits at the heart of the cooking. The style blends Thai flavour with seasonal British produce and European technique, served as a dynamic sharing menu.
Inventive plates expected on the opening menu include:
- British-produce miang kham served in betel leaves
- Shan-inspired khao soi noi
- Roast duck with frites and curry sauce
The approach plays to Knowles’ strengths. Kiln taught her to coax deep flavour from fire and fermentation, and PAM’s menu reads like a more personal, freer version of that philosophy, with Thai regional dishes reimagined through a London larder.
More than a restaurant
PAM is designed to double as a cultural hub for the neighbourhood. The plan includes quarterly art exhibitions, guest chef collaborations and DJ sets, all a short walk from the new London Museum quarter taking shape in Smithfield.
That positioning makes sense. Charterhouse Street sits in the middle of one of London’s most exciting food postcodes, where Clerkenwell’s restaurants, Smithfield’s historic market and the incoming museum crowd are converging. A 45-seat room with a chef of Knowles’ calibre, fire-driven cooking and a programme that goes beyond the plate should have no trouble filling seats.
